Gazpacho
Great summer time favorite
1 ea cucumber, peeled and seeded
1 ea onion, peeled and rough chopped
1 ea stalk celery, rough chopped
1 ea red and green bell pepper, seeded and rough chopped
2 ea tomatoes, peeled, seeded, diced
1 small can tomato juice
1 tbsp chopped garlic
1 ½ oz olive oil
2 tbsp chopped cilantro
Salt and pepper to taste
Place all ingredents in a blender and puree, adjust seasoning and chill, allow to mature a couple days, serve well chilled, garnish with cucumber or shrimp or celery stalk
